Pineapple & cucumber aguas frescas

Kick off the fun with a summer-perfect pineapple-cucumber drink.
Ingredients:
  • 1 large Bethonga or mareeba Gold pineapple, peeled, cored, cut into 3cm pieces (see note)
  • 3 lebanese cucumbers, unpeeled, cut into 3cm lengths, plus extra wedges, to serve
  • 55g (1/4 cup) caster sugar
  • 1L sparkling mineral water, chilled
  • 3 limes, juiced
  • Ice cubes, to serve
Instructions:
  • In two rounds, combine pineapple, cucumbers, sugar, 250ml (1 cup) sparkling water, and a pinch of salt in a blender. Blend until smooth. Pour the mixture through a fine sieve into a bowl, pressing down with a spoon to extract all the juice. Discard solids. Remove any froth on top with a paper towel. Transfer the juice to a jug, cover with plastic wrap, and refrigerate for up to 1 day.
  • Just before serving, add lime juice. Fill glasses halfway with ice, then pour in the juice mixture until three-quarters full. Finish with sparkling water and garnish each glass with a cucumber wedge.
