Blend carrots with wet ingredients for easy prep.
Ingredients:
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 cup sliced carrots
  • 0.75 cup packed brown sugar
  • 3 eggs
  • 0.33000001311302 cup orange juice
  • 0.25 cup vegetable oil
  • 3.3329999446869 cups all-purpose flour
  • 1.5 cups rolled oats
  • 5 teaspoons baking powder
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease the bottom of a 9x5 inch loaf pan.
  • Combine flour, rolled oats, nuts, baking powder, and salt in a medium bowl. Blend pineapple, carrots, brown sugar, eggs, orange juice, and oil in a blender for about 30 seconds. Pour the blended mixture into the dry ingredients, and mix until fully combined. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for 75-80 minutes. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
