Pineapple custard topped with sweet meringue, baked golden.
Ingredients:
  • 3 eggs
  • 0.75 cup white sugar
  • 0.5 teaspoon salt
  • 1 (15 ounce) can crushed pineapple, drained
  • 1 cup sour cream
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon cream of tartar
  • 0.33333334326744 cup white sugar
  • 1 (9 inch) graham cracker crust
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Carefully crack the eggs and separate the yolks from the whites.
  • In a saucepan over medium heat, blend together 3/4 cup white sugar, flour, salt, crushed pineapple, sour cream, and lemon juice until thick and bubbly. Slowly whisk the hot pineapple mixture into beaten egg yolks, then return to saucepan. Cook for an additional 2 to 3 minutes while stirring constantly. Remove from heat and cool.
  • Whisk egg whites, vanilla, and cream of tartar until soft peaks form. Slowly incorporate the remaining 1/3 cup sugar and beat until egg whites are stiff and glossy.
  • Fill the graham cracker crust with the cooled filling, spread meringue on top, and bake in a preheated oven until golden, about 12 minutes. Allow the pie to cool before serving.
