Sweet tropical tea cookies made with canned crushed pineapple for easy entertaining.
Ingredients:
  • 0.33333334326744 cup milk
  • 2 teaspoons pineapple juice
  • 1 cup white sugar, divided
  • 0.5 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 2 teaspoons crushed pineapple
  • 2 tablespoons pineapple juice
  • 1 tablespoon crushed pineapple
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect bake.
  • Mix milk and 2 teaspoons of fresh pineapple juice in a bowl and allow it to sit.
  • In a large bowl, combine 3/4 cup sugar with butter until well blended. Mix in the egg and stir in a mixture of pineapple juice and milk. Add flour, baking powder, and baking soda. Fold in 2 teaspoons of crushed pineapple. Drop spoonfuls of batter onto ungreased cookie sheets.
  • Bake until edges are lightly golden, about 10-12 minutes in the preheated oven.
  • Prepare the glaze by combining the remaining 1/4 cup of sugar, 2 tablespoons of pineapple juice, and the remaining 1 tablespoon of crushed pineapple in a bowl. Drizzle or spread over the cooled cookies.
