Transform fresh pineapple into crispy wafers, perfect for holding your favorite ice cream dessert.
Ingredients:
  • 75g unsalted butter, melted
  • 1/2 fresh pineapple, diced
  • 50g plain flour
  • 200g icing sugar
  • 40.00 gm caster sugar
  • 20.00 ml dark rum
  • Coconut ice-cream, to serve
  • 125g good-quality dark chocolate, grated
  • 30.00 gm caster sugar
  • 60ml cream
Instructions:
  • Preheat your oven to 170°C, then line a baking tray with parchment paper and lightly grease the outside of a dariole mould.
  • Combine butter, 75g pineapple, flour, and icing sugar in a blender until ultra-smooth. Spoon mixture onto a baking tray, forming 8cm circles (leave space for expansion). Bake until golden and bubbling, about 8-10 minutes. Cool briefly, then shape circles around an upturned dariole mould to create baskets. If wafers harden too fast, briefly reheat in the oven. Store the molded wafers in an airtight container for up to 3 days.
  • In a saucepan, combine chocolate, sugar, and 1 cup (250ml) water over medium heat. Bring to a boil while stirring, then simmer on low for 10 minutes. Fold in cream and let cool.
  • In a saucepan over low heat, combine caster sugar, dark rum, and 2 tablespoons of water. Stir until the sugar is dissolved. Add the rest of the pineapple and cook, stirring, for 2-3 minutes until lightly caramelised. Allow to cool. Serve the caramelised pineapple with ice-cream in baskets topped with chocolate sauce.
