Tropical fruit infused jam, a little taste of paradise in every jar, perfect for gifting and sharing joy.
Ingredients:
  • 1 jar (6 ounces) maraschino cherries, drained and 1/3 cup syrup reserved
  • 1 can (20 ounces) crushed pineapple in syrup, undrained
  • 6 ounces dried apricots, cut into fourths (about 1 cup)
  • 1/4 cup water
  • 3 1/2 cups sugar
  • 2 tablespoons lemon juice
  • 1 pouch (3 ounces) liquid fruit pectin (from 6-ounce package)
Instructions:
  • Roughly chop the cherries and set them aside. In a Dutch oven, bring the reserved cherry syrup, pineapple, apricots, and water to a boil, stirring occasionally. Lower the heat, cover, and simmer for about 10 minutes until the apricots are tender, stirring occasionally.
  • Combine the sugar, lemon juice, and cherries in a saucepan. Bring to a vigorous boil over high heat, stirring occasionally. Boil and stir for 1 minute, then remove from the heat and add the pectin.
  • Pour the hot mixture into sterilized jars or freezer containers, ensuring there is a 1/2-inch headspace. Wipe the rims of the jars, seal them tightly, and let them cool. Store in the refrigerator or freezer for up to 3 months. Remember to thaw before serving.
