Pineapple-Coconut Sauce

Indulgent tropical sauce with crushed pineapple and coconut.
Ingredients:
  • 0.75 cup crushed pineapple in juice, divided
  • 0.5 cup cream of coconut, divided
  • 0.25 cup heavy whipping cream
Instructions:
  • In a blender, combine 1/2 cup crushed pineapple and cream of coconut until creamy. Mix in heavy cream with a few pulses, then transfer the mixture to a bowl.
  • Gently incorporate the rest of the crushed pineapple into the blended mixture. Cover the bowl with plastic wrap and chill in the fridge for a minimum of 30 minutes.
