Ginger pineapple rice: cooked in fragrant pineapple juice, tossed with chunks of sweet pineapple and green onions for a burst of tropical flavor.
Ingredients:
  • 1 (20 ounce) can pineapple chunks with juice
  • 0.75 cup water, or as needed
  • 0.75 cup uncooked long-grain rice
  • 0.5 teaspoon freshly grated ginger
  • 0.5 teaspoon salt
  • 3 medium green onions, white and green parts, finely chopped
Instructions:
  • Measure out pineapple juice and top up with water to reach 1 3/4 cups of liquid. Transfer to a saucepan, keeping the pineapple chunks aside.
  • Combine rice, ginger, and salt in a saucepan and bring to a boil. Lower the heat, simmer, and cover until rice is tender and liquid is mostly absorbed, about 18 to 20 minutes.
  • Combine the pineapple chunks and green onions, then gently fluff with a fork to combine.
