Whip up a quick and delicious pineapple fried rice with leftover rice, garlic, ginger, veggies, ham, and pineapple.
Ingredients:
  • 3 tablespoons canola oil
  • 3 cups cooked and cooled white rice (leftover rice is perfect)
  • 1 clove garlic, finely chopped
  • 1 teaspoon grated fresh gingerroot
  • 3/4 cup thinly sliced green onions
  • 1/2 cup diced carrot
  • 1/2 cup diced ham
  • 2 eggs, beaten
  • 2 teaspoons soy sauce
  • 1/2 cup diced fresh or canned pineapple
Instructions:
  • Prepare all ingredients by chopping and dicing them ahead of time to ensure a smooth and efficient cooking process.
  • Heat oil in a 12-inch skillet or wok on high heat until hot and shimmering. Stir in rice, using a wooden spoon to break it up and coat it in the oil.
  • Sauté garlic and ginger for 60 seconds, then add green onions, carrot, and ham. Mix well. Push rice to the side and pour in eggs. Scramble eggs into rice until cooked. Season with soy sauce. Take off the heat and gently mix in pineapple.
