Pink grapefruit delicious

Ingredients:
  • 1 pink grapefruit
  • 1 lemon
  • 3 eggs, separated
  • 215g caster sugar
  • 60g butter, melted
  • 50g self-raising flour
  • 250ml milk
  • Icing sugar mixture, to serve
  • Vanilla or lemon ice-cream, to serve
Instructions:
  • Preheat the oven to 180°C and grease six 3/4-cup (185ml) ovenproof ramekins, placing them in a roasting pan. Finely grate the grapefruit and lemon to obtain 1 tablespoon of rind and squeeze to get 3/4 cup (185ml) of combined juice.
  • In a medium bowl, use an electric mixer to whisk together egg yolks and half of the caster sugar until pale and creamy. Then, mix in combined rinds, juice, butter, flour, and milk until well combined.
  • Whip egg whites in a clean, dry bowl with an electric mixer until soft peaks form. Slowly add the rest of the caster sugar and mix until dissolved. Gently fold in one-third of the grapefruit mixture, then fold in the rest in 2 batches.
  • Evenly divide the mixture into the ramekins. Place the ramekins in a pan and add boiling water halfway up the sides. Bake for 12-15 minutes until golden brown and cooked. Dust with icing sugar and serve with ice cream, if desired.
