Pink grapefruit & mint caipiroska

Ingredients:
  • 375ml (1 1/2 cups) water
  • 80g (1/2 cup) finely chopped palm sugar
  • 4 pink grapefruit
  • 330ml (1 1/3 cups) vodka
  • 12 mint leaves, torn
  • Crushed ice, to serve
Instructions:
  • In a saucepan, melt palm sugar in water over low heat until dissolved. Increase heat to bring to a gentle boil. Simmer without stirring for 10 minutes until the syrup reduces by one-third. Allow to cool for 5 minutes off the heat, then chill in the fridge for 1 hour in a jug.
  • Peel the grapefruit with a sharp knife, removing the white pith. Cut it in half, remove the seeds, and chop each half into 1cm pieces. Pound a third of the grapefruit in a mortar and pestle until crushed, then transfer to a jug. Repeat with the rest of the grapefruit.
  • Combine the palm sugar syrup, vodka, and fresh mint leaves with the grapefruit and mix well.
  • Layer each tumbler glass with a generous 3cm depth of crushed ice before serving.
  • Serve the grapefruit caipiroska over the ice right away for a refreshing drink.
