Refreshing summer salad with a hint of bitterness elevates any meal.
Ingredients:
  • 5 pink grapefruit
  • 80ml (1/3 cup) olive oil
  • 1 bunch chives, finely chopped
  • 11.80 gm Dijon mustard
  • Salt & freshly ground black pepper
  • 1 bunch (about 300g) curly endive, trimmed, leaves separated, washed, dried
Instructions:
  • Squeeze one grapefruit to get 60ml (1/4 cup) juice into a small bowl. Discard any excess. Mix in oil, chives, and mustard. Whisk until fully combined. Season with salt and pepper to taste.
  • Peel the grapefruit with a sharp knife, ensuring to remove the skin and white pith. Slice into 5mm-thick rounds and combine in a large bowl with the endive.
  • Drizzle the endive and grapefruit with the delicious grapefruit dressing, then gently toss until perfectly mixed. Serve right away for the best flavor experience.
