Pink grapefruit and rocket salad

Ingredients:
  • 2 pink grapefruits
  • 1 bunch asparagus, woody ends trimmed, cut diagonally into 5cm pieces
  • 150g baby rocket leaves
Instructions:
  • Peel grapefruits with a small knife, collecting the segments and juices in a bowl.
  • Blanch asparagus in boiling water for 2 minutes until vibrant green. Shock in cold water and thoroughly drain.
  • Mix together the grapefruit juice, oil, salt, and pepper in a bowl.
  • Combine fresh, peppery rocket, crisp asparagus, and tangy grapefruit wedges in a generous bowl. Drizzle the vibrant mix with zesty dressing and indulge right away.
