Pink Grapefruit Sorbet

Refreshing grapefruit sorbet with mint garnish - perfect palate cleanser after a meal or fish course.
Ingredients:
  • 3 large pink or red grapefruit, scrubbed
  • 4 cups water
  • 0.25 cup light corn syrup
  • 1 dash red food coloring
Instructions:
  • Using a vegetable peeler or zester, take off 3 long strips of grapefruit peel (zest only, no pith) and place them in a saucepan. Add water, sugar, and corn syrup, then bring to a boil. Stir and cook until the sugar dissolves, approximately 2 minutes. Chill the sugar syrup in the refrigerator or over a bowl of ice for quicker cooling. Remove and discard the peel before proceeding.
  • Extract 2 cups of fresh grapefruit juice, then strain it to remove pulp. Combine the chilled sugar syrup with the grapefruit juice and gently mix. Add food coloring slowly until you reach a desired natural pink hue. Remember, a little goes a long way.
  • Transfer the mixture into an ice cream maker and freeze as per the manufacturer's instructions. Once done, move the ice cream to a container and freeze until it's firm enough to serve.
