Ingredients:
  • 4 egg whites, at room temperature
  • 220g (1 cup) caster sugar
  • 5.00 gm cornflour, sifted
  • 1 tsp white vinegar
  • 3-4 drops pink food colouring
  • 20.00 ml hundreds and thousands
Instructions:
  • Preheat your oven to 100°C and prepare 2 baking trays with non-stick baking paper.
  • In a spacious, spotless mixing bowl, add the egg whites. Whip the egg whites with an electric mixer or beaters until soft peaks form, with adult supervision if needed.
  • Add the sugar gradually, one spoonful at a time, and whisk until fully combined. Whisk for an additional 2-3 minutes until the mixture is thick, glossy, and the sugar is dissolved, forming long trailing peaks when the beaters are lifted. Stir in the cornflour, vinegar, and pink coloring until just combined.
  • Spoon the mixture evenly onto lined trays using 2 dessertspoons to create meringues. Sprinkle with colorful hundreds and thousands for a fun touch.
  • Bake the meringues in a preheated oven for 2 3/4 hours until crisp and they sound hollow when tapped underneath. Turn off the oven and let the meringues sit in the oven for 3-4 hours until completely cool.
