Crispy banana fritters coated in cinnamon sugar.
Ingredients:
  • Vegetable oil, to deep-fry
  • 225g (1 1/2 cups) plain flour
  • Pinch of salt
  • 250ml (1 cup) chilled water
  • 55g (1/4 cup) caster sugar
  • 1.25 gm ground cinnamon
  • 6 bananas, peeled, thickly sliced diagonally
Instructions:
  • Mix flour and salt in a bowl until a batter forms. Then, mix sugar and cinnamon in another bowl and set aside.
  • Pour enough oil into a medium saucepan until it reaches a depth of 6cm. Heat the oil to 190C over medium heat. To test if the oil is ready, a cube of bread should turn golden in 10 seconds. Coat 4 banana slices in the batter. Gently place them into the hot oil and fry for about 3 minutes until crispy and golden. Remove and place on a plate lined with paper towel. Repeat with the remaining banana slices and batter in 5 more batches, making sure to reheat the oil between batches.
  • Place the pisang goreng on a serving platter and generously sprinkle with the cinnamon sugar.
