Elevate peas with crispy prosciutto and a splash of wine for a gourmet twist.
Ingredients:
  • 6 slices prosciutto, coarsely chopped
  • 1 large leek, halved, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1kg pkt frozen baby peas
  • 60ml (1/4 cup) white wine
  • 80ml (1/3 cup) chicken style liquid stock
  • 20g butter, chopped
Instructions:
  • In a large heavy-based saucepan over medium-high heat, sizzle prosciutto in hot oil until golden, then stir in leek and garlic until soft, about 4 minutes.
  • Toss in peas and stir until coated. Pour in wine and cook until nearly evaporated. Mix in the stock, cover, and simmer over medium-low heat for 5-6 minutes until peas are tender. Season with pepper and finish by topping with butter.
