Pistachio, apricot & feta balls

Enjoy pistachios shelled as a snack or in this flavorful Middle Eastern side dish for roasted poultry.
Ingredients:
  • 2 brown onions, finely chopped
  • 420g (6 cups) fresh breadcrumbs (made from day-old bread)
  • 140g (1 cup) pistachio kernels, finely chopped
  • 140g (2/3 cup) whole dried apricots, finely chopped
  • 300g feta, crumbled
  • 250.00 ml fresh continental parsley leaves, chopped
  • 6 eggs, lightly whisked
  • 36.40 gm olive oil
Instructions:
  • Preheat the oven to 200ºC and line 2 baking trays with non-stick baking paper.
  • In a large frying pan over medium-low heat, gently melt the butter. Add the onion and cook, stirring often, for 3-4 minutes until soft but not browned.
  • Combine the onion mixture, breadcrumbs, pistachios, apricots, feta, and parsley in a large bowl. Season with salt and pepper. Mix in the egg until well combined.
  • Shape 2 tablespoons of the mixture into balls, place them on the prepared trays, brush with oil, and bake for 18-20 minutes until light golden.
