Create a delicious and quick side dish with available ingredients.
Ingredients:
  • 250.00 ml couscous
  • 62.50 ml currants
  • 250.00 gm boiling water
  • 82.50 ml chopped fresh mint leaves
  • 125.00 ml pistachio kernels, chopped
  • 125g can chickpeas, drained, rinsed
  • 410g can baby carrots, drained, rinsed
  • Fresh mint leaves, to serve
  • 42.00 gm orange juice
  • 28.60 gm honey
Instructions:
  • Prepare the dressing by combining orange juice, honey, oil, salt, and pepper in a bowl. Whisk the ingredients together using a fork until well combined.
  • Prepare couscous salad: Combine couscous, currants, and boiling water in a heatproof bowl. Cover and let stand for 5 minutes until water is absorbed. Fluff with a fork to separate grains, then cool for 5 minutes before serving.
  • Combine fresh mint leaves, chopped pistachios, chickpeas, and sliced carrots in a bowl. Season with salt and pepper, then mix well. Drizzle with honey dressing and toss to coat. Finish by garnishing with fresh mint leaves before serving.
