Ingredients:
  • 12 (about 800g) lamb cutlets
  • 20.00 ml Moroccan seasoning (or a combination of ground cinnamon, cumin and coriander)
  • 1 red onion, finely chopped
  • 250ml water
  • 170g raisins
  • 190g couscous
  • 75g pistachio
  • 125.00 ml finely shredded mint, plus mint sprigs, extra, to serve
  • Lemon wedges, to serve
Instructions:
  • In a medium bowl, mix the lamb with half of the Moroccan seasoning and half of the oil. Season with salt and pepper. Heat a large non-stick frying pan over high heat. Sear the lamb for 2 minutes on each side for medium doneness or until cooked to your preference. Place on a plate, cover with foil, and let rest for 5 minutes before serving.
  • Next, toss in the onion, remaining seasoning, and remaining oil into the pan and cook for 3 minutes until the onion slightly softens. Pour in the water or stock, add raisins, and bring it to a boil. Remove from heat, stir in couscous, cover with foil, and let it sit for 5 minutes. Fluff the grains with a fork, then gently mix in pistachios and shredded mint. Enjoy!
  • Divide the fluffy couscous onto serving plates, layer with succulent lamb cutlets and fresh mint sprigs, and finish off with a zesty lemon wedge for serving.
