Savor the vibrant flavors of Spain with this veggie-packed Pisto Manchego dish featuring zucchini, potatoes, tomatoes, and peppers.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 2 medium onions, finely sliced
  • 3 cloves garlic, finely sliced
  • 1 small potato, peeled and diced
  • 1 medium green bell pepper, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 2 medium zucchini, sliced
  • 4 medium tomatoes, peeled and chopped
  • 1 teaspoon white sugar, or to taste
  • salt and freshly ground black pepper to taste
Instructions:
  • In a skillet, heat oil over medium heat. Sauté onions and garlic for 3 minutes. Increase heat to medium-high, add potato and bell peppers, stirring occasionally for 5 minutes. Incorporate zucchini and cook for an additional 5 minutes, stirring constantly.
  • Stir in the tomatoes until well combined. Simmer covered until softened, about 15 minutes. Season with sugar, salt, and pepper to taste.
  • Stir constantly over higher heat until the mixture thickens to your liking.
