Delicious muffins with ripe plantains and cornmeal.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.66666668653488 cup sugar
  • 0.5 cup cornmeal
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup milk
  • 1 cup mashed, ripe plantains
  • 2 large eggs
  • 0.33333334326744 cup corn oil
  • 3 tablespoons melted butter
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a muffin tin with either greased cups or paper liners.
  • Combine flour, sugar, cornmeal, baking powder, and salt in a bowl. In a separate bowl, whisk together milk, plantains, eggs, oil, and butter. Gently mix the flour mixture into the milk mixture until just combined. Rest the batter at room temperature for 10 to 15 minutes before filling muffin cups about 2/3 full.
  • Bake in the preheated oven for 15 to 18 minutes until golden and the tops spring back when lightly pressed.
