Ingredients:
  • 400g chicken breast fillets
  • 1/2 small red onion, finely chopped
  • 20.00 ml dijonnaise
  • 8 slices wholemeal bread
  • 160g gouda cheese, thinly sliced
  • 40g baby rocket leaves
Instructions:
  • In a small saucepan, add chicken and cover with cold water. Bring to a boil over medium heat, then simmer on low for 5 to 7 minutes. Remove from heat, cover, and let stand for 5 minutes. Take chicken out, let it cool slightly, and coarsely chop. Mix chopped chicken with onion and dijonnaise in a bowl.
  • Preheat the grill on high heat and toast the bread for 2 minutes on each side until golden brown.
  • Place the savory chicken mixture and cheese topping on the toast. Grill until the cheese is melted. Finish with a handful of fresh rocket leaves before serving.
