Ingredients:
  • 3 egg yolks
  • 42.00 gm lemon juice
  • 125g butter, melted, hot
  • 0.60 gm salt
  • 20.00 ml white vinegar
  • 4 x 60g eggs
  • 4 plain bagels, halved, toasted
  • 100g baby spinach
  • 200g smoked salmon
Instructions:
  • Combine egg yolks and lemon juice in a food processor until smooth. Gradually pour in the butter with the processor running until a thick sauce forms. Transfer the sauce to a bowl, season to taste, and cover with plastic wrap to prevent a skin from forming.
  • Fill a saucepan two-thirds full with cold water, then add salt and vinegar. Bring it to a boil, then lower the heat to let it simmer.
  • Crack one egg onto a saucer. Swirl water gently with a spoon until a whirlpool forms. Lower the egg into the center. Let it cook undisturbed for 3 minutes for a soft yolk or 4 minutes for semi-soft. Lift the egg out using a slotted spoon.
  • On serving plates, arrange bagels, spinach, smoked salmon, and egg. Finish with a decadent drizzle of hollandaise sauce before serving.
