Ingredients:
  • 2 tsp white vinegar
  • 4 eggs, at room temperature
  • Bread, toasted, buttered, to serve
Instructions:
  • Fill a large saucepan with cold water until it reaches 8cm deep. Stir in vinegar and bring to a boil over medium heat. Once boiling, reduce heat to low, maintaining a simmer around the edges.
  • Gently crack 1 egg into a shallow bowl. Create a whirlpool in gently simmering water using a wooden spoon. Slide the egg into the center. Poach for 2-3 minutes for a soft yolk or 3-4 minutes for firm. Lift the egg out with a slotted spoon.
  • Remove any foam from the water with a slotted spoon. Poach the eggs until cooked to your preference. Serve the poached eggs on top of the toast.
