Instructions:
  • 1. Fill a wide pan with boiling salted water until half full and bring it to a light simmer over medium heat. 2. Crack each egg into a cup and gently pour into the water in one smooth motion. 3. Allow the eggs to cook for about 2 minutes for really soft poached eggs or 4 minutes for soft to firm eggs, depending on your preference. 4. To check for doneness, carefully remove one egg with a slotted spoon and gently press with a teaspoon – if it's too soft, cook for an additional minute. 5. Once ready, transfer the poached eggs to kitchen paper to absorb excess water and serve with buttered toast, sea salt, and black pepper.
