Poached peaches with a fragrant rosewater syrup, inspired by Middle Eastern flavors.
Ingredients:
  • 375ml (1 1/2 cups) dry white wine
  • 375ml (1 1/2 cups) water
  • 100g (1/2 cup) caster sugar
  • 2 x 7cm cinnamon sticks
  • 1 vanilla bean, split
  • 2 whole cloves
  • 8 small (about 70g each) just-ripe peaches
  • 200g natural yoghurt
  • 20.00 ml rosewater
  • 12.00 gm icing sugar mixture
Instructions:
  • In a saucepan over low heat, mix wine, water, sugar, cinnamon, vanilla bean, and cloves. Stir for 5 minutes until sugar dissolves. Add peaches, increase heat to medium, and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, turning occasionally until peaches are tender. Let cool for 15 minutes, then transfer to a bowl. Chill in the fridge for 2 hours covered with plastic wrap.
  • In a bowl, mix together the yogurt, fragrant rosewater, and sweet icing sugar.
  • Distribute the peaches into individual bowls and drizzle with the delicious white wine syrup. Enjoy the peaches with a side of fragrant rosewater yogurt.
