Ingredients:
  • 450.00 gm white sugar
  • 375.00 gm water
  • 196.88 gm fresh orange juice
  • 20.00 ml Angostura bitters
  • 6 large fresh peaches
Instructions:
  • Combine sugar, water, orange juice, and bitters in a saucepan over low heat. Stir occasionally for 3 minutes until the sugar dissolves. Increase heat to high, bring mixture to a boil, then reduce heat to medium.
  • Score the base of each peach with a small cross. Place peaches in a saucepan and cover. Simmer gently for 10 minutes until just tender. Remove saucepan from heat and use a slotted spoon to transfer peaches to a bowl of iced water. Peel and discard skins from peaches after draining.
  • Place the syrup back on high heat and let it boil for 6 to 8 minutes until it reduces by one-third. Allow it to cool before using.
  • Divide the peaches among serving bowls, generously drizzle with syrup, and serve immediately.
