Poached peaches or apricots & lemongrass

Ingredients:
  • 2 stalks of lemongrass
  • 50 g sugar
  • 6-8 peaches or 12 apricots
Instructions:
  • Cut the lemongrass in half lengthwise and place it in a small pan. Heat sugar and 400ml of water in the pan with the lemongrass over medium-low heat until the sugar dissolves. Add peaches or apricots, and place a circle of greaseproof paper on top to keep the fruit covered with liquid. Simmer gently for 4 to 5 minutes for apricots, or 10 to 12 minutes for peaches, until the fruit is tender. Transfer to a bowl to cool.
