Ingredients:
  • 500ml (2 cups) water
  • 220g (1 cup) caster sugar
  • 3 cardamom pods, split lengthways
  • 1 cinnamon stick
  • 4 just-ripe freestone peaches, halved, stone removed
Instructions:
  • In a large heavy-based saucepan, combine water, sugar, cardamom, and cinnamon. Stir over low heat until the sugar is fully dissolved.
  • Turn up the heat to high until it comes to a boil, then lower to medium-low and simmer without a lid for 8-10 minutes until the mixture thickens slightly. Gently place the peaches in the pot, cover, and simmer for an additional 4-5 minutes until they are tender.
  • Transfer the peaches to a bowl using a slotted spoon. Let them cool for 30 minutes. Peel and cut the peaches into wedges, discarding the skins. Place the peaches into an airtight jar or container, then pour in the cooled syrup. Seal the container and refrigerate.
