Ingredients:
  • 375mls (1 1/2 cups) white wine
  • 250mls (1 cup) water
  • 150g (2/3 cup) caster sugar
  • 4 medium firm ripe peaches
  • 35g (1/3 cup) flaked almonds
Instructions:
  • Preheat your oven to a toasty 180°C (160°C for fan-forced ovens).
  • In a large saucepan, combine the wine, water, and sugar. Stir over medium-low heat for 5 minutes until the sugar fully dissolves. Increase heat to high and bring to a boil.
  • Gently toss in the peaches and lower the heat to medium. Let it simmer without a lid for 15-20 minutes until the peaches are tender.
  • Spread almonds on baking tray and toast in pre-heated oven until golden, about 5-6 minutes. Remove and set aside.
  • Using a pair of tongs, gently remove the skins from the peaches. Then, place the peeled peaches into separate serving bowls, drizzle with the poaching liquid, and sprinkle with toasted almonds.
