Poached rhubarb with ginger pecan crumble

Finish your meal with a quick and delicious poached rhubarb dessert.
Ingredients:
  • 70.95 gm caster sugar
  • 42.00 gm orange juice
  • 1 bunch rhubarb, trimmed, cut into 4cm pieces
  • 6 gingernut biscuits
  • 62.50 ml pecan nuts
Instructions:
  • In a saucepan over medium heat, stir together sugar, 1/3 cup cold water, and juice until sugar is dissolved. Bring to a simmer, then add rhubarb. Reduce heat to low and simmer for 5 minutes until tender. Remove from heat.
  • Pulse biscuits and pecans in food processor until coarse crumbs form.
  • Distribute rhubarb evenly among 4 bowls. Top each with a generous amount of crumble, then serve with a scoop of ice cream on the side.
