Celebrate rhubarb season with this effortless and foolproof recipe!
Ingredients:
  • 2 kg rhubarb
  • 5 cm piece of ginger
  • 300 g sugar
  • 1 bunch of fresh thyme (20g) optional
Instructions:
  • Prepare 2kg of rhubarb by trimming and slicing it into 1cm pieces, then transfer to a large pan. Grate in a 5cm piece of ginger and add 300g of sugar and 1 bunch of fresh thyme (20g). Stir well. Bring the mixture to a boil over medium-high heat. Simmer for 12 to 15 minutes until soft and syrupy. For a compote, simmer for an additional 20 minutes. Remove the thyme, if used, then let it cool before serving.
