Try our gourmet bacon pesto spaghetti with a perfect poached egg and parmesan for a simple yet satisfying dinner.
Ingredients:
  • 375g spaghetti
  • 4 Free Range Eggs
  • 6 bacon rashers, excess fat trimmed, thinly sliced
  • 190g jar basil pesto
  • 40g parmesan
Instructions:
  • Boil the spaghetti in a saucepan of water according to package instructions until al dente. Drain thoroughly, saving 1/2 cup (125ml) of the cooking liquid.
  • Fill a deep saucepan two-thirds full with water and bring to a boil. Crack 1 egg into a small cup. Stir the water with a spoon to create a whirlpool and gently pour the egg into the centre. Cook without stirring for 2 minutes for a soft yolk or until desired doneness. Use a slotted spoon to transfer the poached egg to a plate. Repeat with the remaining eggs.
  • - Preheat a large non-stick deep frying pan over high heat. - Stir-fry the bacon for 5 minutes until crispy. - Add the pasta, pesto, and reserved cooking liquid to the pan. - Toss everything together and cook for an additional 2 minutes until the pasta mixture is heated through.
  • Portion the mixture into individual serving bowls, then garnish with poached eggs, grated parmesan, and a sprinkle of seasoning. Serve promptly.
