Prepare portable bacon and egg quiches for a convenient breakfast on-the-go.
Ingredients:
  • 6 rashers streaky bacon
  • 100g fetta, crumbled
  • 4 Free Range Eggs
  • 250ml thickened cream
  • 9 cherry tomatoes, halved
Instructions:
  • Preheat your oven to 180°C. Grease and line 6 holes of a ½-cup (125ml) Texas muffin pan. Wrap each hole with a bacon strip and fill evenly with fetta.
  • In a large jug, vigorously combine the eggs and cream until well mixed. Season with your favorite herbs and spices. Pour the mixture evenly over the feta cheese and generously top with fresh tomato slices.
  • Bake for 25-30 minutes until firm to the touch. Let it cool in the pan for 5 minutes, then carefully transfer to a wire rack to cool completely.
