Master tender sous vide eggs with firm whites and gooey yolks using this fail-proof recipe, your new go-to for perfect poached eggs.
Ingredients:
  • 4 large cold eggs
  • 1 pinch salt and freshly ground black pepper
Instructions:
  • Fill a large pot with water and insert a sous vide immersion cooker. Set the temperature to 167 degrees F (75 degrees C) as per the manufacturer's instructions and let the water heat for 15 minutes.
  • Carefully slide the eggs into the simmering water with a slotted spoon, then promptly set a timer for 13 minutes.
  • Once the timer goes off, carefully remove the eggs from the water and allow them to cool for 3 minutes. Lightly crack the egg around its center and remove the top half of the shell. Slide the egg into a small bowl or serve it over toast, then season with salt and pepper to taste.
