Poh's spiced tuna & coriander rice

Enhance Poh's spicy tuna & cilantro rice with a vibrant touch of lemon zest.
Ingredients:
  • 300.00 gm Medium Grain white rice
  • 2 tsp cumin seeds
  • 1 large brown onion, diced 1cm
  • 425g can tuna in oil, drained, flaked
  • 187.50 ml firmly packed fresh herbs (such as coriander, flat-leaf parsley or mint)
  • 36.40 gm olive oil
  • Light soy sauce (or salt and pepper), to taste
  • Lemon, zested and juiced (optional)
Instructions:
  • Begin by preparing the rice. Cook SunRice Medium grain rice following the package instructions.
  • In a large non-stick fry pan or wok over medium heat, invigorate 2 tablespoons of oil with cumin until fragrant. Stir in onions until slightly translucent, then incorporate tuna and take off heat.
  • Gently mix in the rice until well combined. Add the fresh herbs and fold them in. For a burst of flavor, grate some lemon zest over the dish and squeeze in some lemon juice.
