Lemon thyme chicken with sage smashed potatoes and charred chilli broccoli recipe

Try Poh's flavorful lemon thyme chicken for an easy weeknight meal that's sure to impress.
Ingredients:
  • 4 Free Range Chicken Breast Fillets
  • 60.00 ml of picked thyme leaves
  • 62.50 ml packed, chopped parsley
  • Juice and zest of 1 lemon
  • 109.20 gm olive oil
  • Salt and black pepper to taste
  • 1kg potatoes, skin on
  • 1/2 bunch sage leaves picked OR 4 sprigs fresh rosemary
  • 50g butter, diced
  • 2 small - medium heads broccoli, florets cut into bit sized pieces
  • ½ - 1 tsp chilli flakes
Instructions:
  • Mix tender chicken pieces with fragrant thyme, fresh parsley, zesty lemon, quality olive oil, and a pinch of salt and pepper in a bowl until fully incorporated using your hands. Chill in the fridge until veggies are 15 mins from completion.
  • Preheat the oven to 190ºC. Drizzle olive oil onto a baking tray lined with paper. Gently squash the potatoes with the back of a spoon to split them slightly, then place on the tray to crisp up. Roast for about an hour until golden brown and crispy. Halfway through, flip the potatoes for even cooking. Sprinkle with sage or rosemary towards the end for extra flavor.
  • Combine the broccoli, olive oil, salt, pepper, and chili flakes in a bowl, ensuring the broccoli is evenly coated. Transfer the mixture onto a baking tray lined with parchment paper. Roast at 190ºC for approximately 20 minutes, timing it to cook simultaneously with the potatoes, which should have about 30 minutes remaining.
  • Cook the chicken pieces in batches in a large non-stick frypan over medium-high heat until cooked through and nicely browned on both sides, avoiding overcrowding the pan. Once all the chicken is cooked, pour the marinating juices into the pan and bring to a boil. Transfer the gravy to a small jug to be served at the center of the dinner table.
  • Enjoy the dish by serving individual portions or placing it at the center of the dining table for sharing. Make sure everything is served hot.
