Poached pears in red wine and spices, a timeless delicacy.
Ingredients:
  • 3 cups red wine
  • 1 cup white sugar
  • 2 cinnamon sticks
  • 4 whole cloves
  • 1 strip orange zest
  • 1 teaspoon fennel seed
  • 3 whole black peppercorns
  • 2 bay leaves
  • 6 large firm pears
Instructions:
  • In a large saucepan, mix together red wine, sugar, cinnamon, cloves, orange zest, fennel seed, peppercorns, and bay leaves. Peel the pears, remove the cores from the bottom while keeping the stems intact. Bring the wine to a boil over high heat, stirring until the sugar dissolves. Add the pears, simmer until tender for about 25 minutes over medium-low heat.
  • Take out the pears from the wine syrup, cover, and chill until cold. Strain the syrup through a mesh sieve to remove the spices. Simmer the syrup over medium heat until it thickens enough to coat the back of a spoon. Chill the syrup until cold.
  • After the syrup has cooled, generously pour it over the pears, cover them, and refrigerate for a minimum of 2 hours before serving.
