Polenta with goat's cheese and chargrilled vegies

Grilled polenta slices topped with creamy goat cheese are irresistibly delicious.
Ingredients:
  • 1 red capsicum
  • 1 medium eggplant
  • 4 zucchini
  • 2 garlic cloves, crushed
  • 40ml (2 tbsp) olive oil, plus extra to drizzle
  • 1 punnet baby corn
  • 1 small Spanish onion, cut into wedges
  • 1 small radicchio lettuce, cut into wedges
  • 150g (1 cup) instant polenta
  • 40g butter
  • 250g soft goat's cheese
Instructions:
  • Cut the capsicum, eggplant, and zucchini into uniform pieces. Mix the garlic and oil in a bowl, then add the vegetables and radicchio, ensuring they are well coated. Grill the vegetables in batches on a hot chargrill pan until they are nicely charred. Set aside for further use.
  • Season a liter of boiling water with 1 teaspoon of salt. Gradually pour in the polenta, stirring constantly over low heat for 6-7 minutes until thickened. Mix in the butter and spread the polenta evenly in a greased baking dish.
  • 1. Preheat grill to high. 2. Sprinkle cheese over polenta and drizzle with additional oil. 3. Grill until golden brown. 4. Cut polenta into wedges and serve alongside vegetables. 5. Finish with a final drizzle of oil before serving.
