Make a crispy parmesan polenta crust for chicken.
Ingredients:
  • 6 single chicken breast fillets
  • 255g (1 1/2 cups) polenta (cornmeal)
  • 40g (1/2 cup) grated Parmesan
  • Salt & ground black pepper, to taste
  • 110g (3/4 cup) plain flour
  • 2 eggs
  • 40.00 gm water
  • 185mls (3/4 cup) olive oil, for cooking chicken
Instructions:
  • First, prep the chicken breasts by trimming them and cutting them into 3cm wide pieces across the grain. In a small bowl, mix polenta, Parmesan, salt, and pepper. Set up your breading station with three separate bowls: one with flour, one with beaten eggs and water, and one with the polenta mixture. Coat each chicken piece lightly with flour, dip into the eggwash, and then coat with the seasoned polenta mixture.
  • In a large heavy-based frying pan over medium-high heat, warm up 60mls (1/4 cup) of olive oil. Cook 1/3 of the polenta coated chicken pieces for 2 minutes on each side until lightly golden and just cooked through. Drain on paper towels and let cool to room temperature. Repeat with the remaining chicken pieces using the remaining oil. Store in an airtight container in the fridge until needed.
