Polynesian Ham and Rice

Elevate your ham and rice dinner with a tropical pineapple twist for an Island-inspired meal.
Ingredients:
  • 1 can (20 ounces) pineapple chunks in juice, drained and juice reserved
  • 1 1/2 cups chicken broth
  • 2/3 cup uncooked regular long-grain rice
  • 2 teaspoons curry powder
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 package (6 ounces) frozen snow (Chinese) pea pods, thawed
  • 1/2 pound fully cooked ham, cut into 1/2-inch pieces
Instructions:
  • Combine the pineapple juice, broth, rice, curry powder, and red pepper in a skillet and bring to a boil. Reduce heat, cover, and simmer for 20 minutes without stirring. Remove from heat, fluff rice with a fork, cover, and let steam for 5 minutes before serving.
  • Halve each pea pod. Mix pea pods, pineapple, and ham into the rice mixture. Heat over medium heat for about 2 minutes, stirring occasionally, until warmed through.
