Delicious Polynesian side dish made with unripe bananas, coconut milk, and onions for a unique twist on traditional Samoan cuisine.
Ingredients:
  • 3 (13.5 ounce) cans coconut milk
  • 1 large onion, chopped
  • 6 small unripe (green) bananas
Instructions:
  • Mix together rich and creamy coconut milk with fragrant onions in a bowl; let the flavors meld together.
  • Bring a large pot of water to a gentle boil. Cook bananas in their skins for 30 to 40 minutes until tender; then drain. Cool bananas under cold water, peel and discard skins.
  • Preheat a large saucepan over medium-high heat. Add bananas to the pan and pour in coconut milk and onion. Cook until the coconut milk is foamy. Let it cool for 5 minutes before serving.
