Delicious Samoan-style main dish with coconut milk, traditionally made with taro leaves and corned beef. In America, we use easily accessible substitutes from the store.
Ingredients:
  • 2 (10 ounce) bags fresh spinach
  • 1 (12 ounce) can corned beef, broken into pieces
  • 2 (10 ounce) cans coconut milk
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Begin by creating a bed of spinach leaves in a 9x13 inch baking dish. Sprinkle a portion of the corned beef on top of the spinach, then proceed to alternate layers of spinach and corned beef until you exhaust all the spinach. Embrace the fullness of the dish as the spinach will reduce in size during cooking. Carefully pour both cans of coconut milk over the layers, gently pressing the leaves down with a spoon. Seal the dish tightly with a lid or aluminum foil.
  • Roast in the oven until spinach wilts and sauce bubbles, about 45 to 55 minutes. Let it cool for 10 minutes prior to serving.
