Ingredients:
  • 800g (about 1/4) cabbage, hard core removed, roughly chopped
  • 250g green beans, topped, tailed, halved
  • 150g baby spinach leaves, washed, dried
  • 2 Lebanese cucumbers, halved lengthways, cut into 1cm-thick strips
  • 1 green capsicum, halved, deseeded, cut into thin strips
  • 1/2 fresh coconut, shell removed, flesh finely grated
  • 1 garlic clove, finely chopped
  • 1 avocado, halved, stone removed, peeled, roughly chopped
  • 60ml (1/4 cup) fresh lemon juice
Instructions:
  • Steam the cabbage and beans in a steamer over a large saucepan of boiling water until bright green and tender crisp, about 4 minutes. Transfer to a large bowl and set aside.
  • Steam the spinach until it wilts, about 1 minute. Then, transfer it to a bowl and let it cool for about 10 minutes.
  • Combine cucumbers and capsicum in a bowl, gently toss. In a small bowl, mix coconut and garlic well, then add to the salad and gently toss to combine.
  • Gently mix in the avocado and lemon juice, then serve promptly.
