Golden brown, crispy Samoan pancakes made with ripe bananas - a tropical delight!
Ingredients:
  • 3.5 cups all-purpose flour
  • 1.3333333730698 cups white sugar
  • 1.5 cups water
  • 2 medium very ripe bananas, mashed
  • 1 tablespoon vanilla extract
  • 1.5 cups vegetable oil for frying, or as needed
Instructions:
  • Combine flour, sugar, and baking powder in a bowl, whisking until fully blended. Add water, bananas, and vanilla, stirring until a smooth and sticky dough forms.
  • Preheat a deep fryer with 3 inches of oil to 350 degrees F (175 degrees C).
  • In batches of four to five, use a large spoon to carefully scoop a scant 1/4 cup of batter and then use another spoon to gently slide it into the hot oil. Fry until panikeke float to the surface and become golden brown, approximately 3 minutes per side. Place on paper towels to drain.
