Rosemary-infused pomegranate jelly: A fragrant homemade spread for crackers.
Ingredients:
  • 4 cups pomegranate juice
  • 4 sprigs fresh rosemary
  • 3 tablespoons fresh lemon juice
  • 1 package (1 3/4 oz) fruit pectin
  • 5 cups sugar
Instructions:
  • In a large Dutch oven, combine pomegranate juice, fresh rosemary, lemon juice, and pectin. Cook over low heat until the pectin is completely dissolved. Increase heat to medium-high and bring the mixture to a boil, stirring constantly. Add sugar and continue stirring as the mixture boils vigorously. Remove from heat and discard the rosemary sprigs.
  • Pour the jelly into 8 sterilized 8-oz jars, leaving 1/2-inch headspace. Wipe the jar rims, seal, and process in a boiling water bath for 10 minutes. Store in a cool, dry place.
