Ponche de Crème (Trinidad's Eggnog)

Trinidad's festive Ponche de Crème: rich, creamy Christmas drink with a generous rum kick, like Caribbean eggnog.
Ingredients:
  • 6 large eggs, beaten
  • 2 teaspoons grated lime zest
  • 3 (14 ounce) cans sweetened condensed milk
  • 0.75 cup canned evaporated milk
  • 1.5 cups rum
  • 1 tablespoon aromatic bitters
  • 1 pinch freshly grated nutmeg
Instructions:
  • In a large bowl, use an electric mixer to beat eggs and lime zest until light and fluffy. Slowly add condensed milk while mixing, then pour in evaporated milk.
  • Mix in the rum and bitters, then dust with nutmeg. Pour into a bottle and refrigerate for a minimum of 1 hour before enjoying.
  • Present the dish on a bed of crushed ice.
