Creamy yogurt over poached fruit topped with crunchy oat-nut crumble.
Ingredients:
  • 75g (1/2 cup) plain flour
  • 50g (1/2 cup) rolled oats
  • 75g (1/2 cup) unsalted pistachio kernels, coarsely chopped
  • 55g (1/4 cup, firmly packed) brown sugar
  • 20g (1/4 cup) shredded coconut
  • 100g butter, cut into 1cm pieces
  • 6 green apples, peeled, cored, cut into wedges
  • 500g frozen mixed berries
  • 200g pkt dried peaches
  • 110g (1/2 cup) white sugar
  • 875g ctn vanilla yoghurt
Instructions:
  • Preheat the oven to 180°C. Combine flour, oats, pistachios, brown sugar, and coconut in a bowl. Mix in butter until it forms a coarse breadcrumb texture. Spread the mixture on a baking tray and bake for 10 minutes or until golden and crisp.
  • In a large saucepan over medium heat, gently cook the apple, berries, peaches, and white sugar, stirring occasionally, until just tender, around 12 minutes. Let cool completely before using.
  • Transfer the fruit mixture to a spacious bowl, then generously dollop the yogurt and sprinkle the crumble topping over it.
