Creamy cheesecake layer topped with fresh fruit and cookie crumbles in individual cups - a delightful and customizable treat for picnics or DIY snacking!
Ingredients:
  • 4 (8 ounce) packages reduced-fat cream cheese, softened
  • 2 cups brown sugar
  • 4 teaspoons vanilla extract
  • 1 pound fresh strawberries, coarsely chopped
  • 1 fresh pineapple - peeled, cored and chopped
  • 1 pound seedless grapes, halved
  • 1 pint blueberries
  • 25 clear, plastic (10 ounce) cups
  • 12 sugar cookies, crushed
  • 2 kiwis, peeled and sliced
Instructions:
  • Combine the cream cheese, brown sugar, and vanilla extract in a bowl, stirring until silky. Chill in the refrigerator for about 30 minutes.
  • Combine the chopped strawberries, pineapple, grapes, and blueberries in a separate bowl, gently mixing them together.
  • For each cup, add a generous 3 tablespoons of the creamy cheese blend to create a decadent half-inch base. Layer on about 1/3 cup of assorted mixed fruit for a satisfying 2-inch layer. Sprinkle a teaspoon or two of crushed sugar cookies over the fruit. Finish off each trifle with a decorative kiwi slice. Chill in the fridge until ready to enjoy.
